Organic Beluga Lentils are a less common variety than other lentils. They stay firm and more intact when cooked so are popular in dishes such as salads and are great in casseroles. After they have finished cooking you'll notice that the water they've been cooked in has turned black. This can be used to add a lovely colour to other dishes, such as soups or rice.
Organic Beluga Lentils are high in iron and protein, making them an excellent addition to vegetarian and vegan diets, especially given the firm meaty texture they produce when cooked. Try using as a meat replacement in bolognese!

To cook: It's not necessary to pre-soak lentils prior to cooking but doing so can cut down the cooking time. Rinse lentils well under a cold running tap to remove dust and debris. Lentils will expand by up to three times their size so use a pan large enough and add water to the lentils in a 3:1 ratio. Bring to the boil, then reduce the heat and simmer for 20-25 minutes or until your desired consistency has been reached. If required, always add salt at the end of cooking lentils as it can cause them to toughen up when added before or during, making it harder to cook them.
