
Baking powder is a raising agent that is often used in baking. It is made from an alkali, bicarbonate of soda, and an acid, cream of tartar, and includes the corn starch filler to absorb moisture. When liquid is added the acid/alkali reaction is activated, producing carbon dioxide which forms bubbles causing the mixture to expand. As soon as this happens we recommend you get your cake mixture into the oven quickly for optimal fluffiness!
You can add a small amount of baking powder to plain powder to create your own version of self-raising flour! It pairs especially well with our Organic Cake & Pastry Flour or our Organic Wholemeal Flour.
